CSA BOX Week 1

Hello All!

Like I was talking about in this post. My family and I are getting CSA boxes weekly from Two Dog Farms and Salad Days Produce.

Going to the farm I was very excited and a little nervous. It was the first box that I was going to get from them and I get a little nervous about everything. So, we pulled up to the farm. I really like going to the farm. It let's me see where they work and how the run things. There on the little porch was Dorothy sitting waiting to fix boxes for the veggie consumers. Her husband, Van, was also there working around the farm. It was very relaxing. Dorothy loaded my box and the other consumer's box and I left.

Here is what I received:

Hydroponic Cucumbers
1/2 Dozen of Yard Eggs sourced from Flora, MS
Radishes



Kohlrabi

Bok Choy

Broccoli
Collard Greens

Green Onions with Scapes
Hydroponic Lettuce









Endive














I am super excited about all of these wonderful things. I think I am the most excited about the Kohlrabi! I am have never had it before and can not wait until I find out how it tastes.

Asian Chicken Lettuce Wraps




Allen and I had a serious craving for Chinese food. So, I decided to cook some for us. I'm trying to eat healthier and this was right up my ally.  I couldn't find a recipe I liked because I don't like mushrooms or water chestnuts. The recipe below is what I came up with. I had most of the ingredients on hand. This dish could be gluten free if gluten free items are bought. It was kinda spicy so go lighter on the chili paste or heavier if that's what you enjoy! 



Ingredients (Makes 4 servings)
1/4

tablespoons  olive oil

tablespoons  teriyaki sauce

tablespoon  soy sauce

1
teaspoon  minced ginger

teaspoon  thai chili paste

1/4

cloves  minced garlic

1/3
teaspoon  salt

1/3
teaspoon  black pepper

1
teaspoon  sugar

1
head Lettuce, Butterhead

Directions
Heat pan with olive oil and brown chicken with minced onion. Add salt, pepper, and carrot and stir.


In a bowl mix the rest of the ingredients besides the lettuce,



Pour the mixture into the pan with the brown chicken and bring to a simmer.



Once most of the liquid is reduced. turn the chicken off and cool.



Wash and dry lettuce.


Fill lettuce leaf with a spoonful of mixture and enjoy!

Time flies....

Lots of things have happened since I started this blog two years ago.. So, I thought I should catch you up.

Allen and I lived in Amory until June of this year. We had a wonderful job where we could work on the same school campus and teach (Allen coached basketball, also). I taught 4th grade language (2011-2012) and then 5th grade reading (2012-2013). That mean I taught the same kids two years in a row. That was an experience. I got to bond with my students very well and enjoyed my time there.

Allen and I had a beautiful baby boy May 24, 2013.I am going to refer to him as Gator. That is his nickname. He is the best thing that could ever had happened to us. We are very blessed. As of today, 8/19/2013, he is 12 weeks old. He is very alert and has been since he was born. I never got the lets sleep all the time baby. Here are some picture of my baby boy.

Most recent.. 3 months old.

 We are thrilled about our new journey. Allen has started a new coaching/teaching job where we are living now; I am staying at home with Gator and getting everything set up to start my graduate degree in Reading Literacy. I can't wait to go back to school! This was my first year since Kindergarten that I have not started school in August.
